Superfoods - Purple corn (Blue maize)[Zea mays L.]

What you need to know

Purple corn is a clour variant of normal sweetcorn, or maize, and so shares all the properties and benefits of normal maize and can be used as a substitute for it in any recipe.

It differs principally in the vivid dark blue or purple colouration of the kernels, and it is the chemicals (anthocyanins) responsible for this unusual colouration which confer many of the unique health benefits of purple corn.

What does this food contain?

As with normal maize, purple corn contains vitamins, minerals and antioxidants but also contains anthocyanins (which have antioxidant, anti-inflammatory and anti-cancer properties) in 5-10x higher concentration than found in fresh blueberries.

Purple corn anthocyanins and other antioxidants are very good for the skin when included in the diet, as they help prevent sun and oxidation damage to capillaries, to promote connective tissue and collagen regeneration and to reduce cholesterol levels.
