What does this food contain?

Although they contain some Vitamin C, pineapple is better known for its other qualities. In Hawaii, they eat chunks of juicy pineapple as a delicious cure for digestive problems; we now know that the fresh fruit contains an enzyme, bromelain, which can digest many times its own weight of protein in a few minutes. This is found only in Pineapple. Pineapple juice is also great for sore throats as it contains antibiotic and anti-inflammatory compounds.

Pineapples don’t continue ripening after harvest. When choosing your pineapple look for one that feels heavy for its size, as this is a good guide to quality. The old wives tale of whether you can tug a leaf easily out of the crown, is meaningless and has no bearing on potential flavour.
