Superfoods - Nori (Laver)[Porphyra yezoensis, P. tenera]

What you need to know

Nori is a type of red seaweed, widely used in Asian cooking.

It is commonly used to wrap sushi and onigiri, but also as a garnish in soups or noodle dishes. It can also be toasted and combined with soy sauce, spices and sugar, or by grinding into a paste with soy sauce.

As well as minerals, dietary fibre and vitamins, Nori contains carotenoids and has quite a high protein content.

Nori is produced by shredding the seaweed and drying it into thin, black sheets, in a way which is very similar to paper making. It contains a fifth of the protein content of an egg per sheet. It comes in a range of grades, with the highest grade being shin-nori.
