What does this food contain?

Good for slimmers, Zucchini, marrow, melons, pumpkins and cucumbers all belong to the same family. Zucchini are more nutritious because the skin can be eaten, which is rich in betacarotene. They also contain Folic acid - 100g supplies more than a quarter of the daily need - and they’re a rich source of potassium. The skins of courgettes and cucumbers contain good amounts of Vitamin A, Vitamin C and minerals such as molybdenum and manganese. They also contain tryptophan, an essential amino acid used to make the chemicals which make us feel happy.

Other Information

Marrow has very little flavour, and even less nutritional value, but it can provide a very healthy way of presenting other foods, stuffed, baked, or steamed.
Zucchini flowers can be eaten raw in salads or for a delicious treat fill them with ricotta cheese, dip in batter and deep fry for one minute. Use olive oil or pure sun or safflower oil - the taste is delicious and the extra calories worth it for the occasional pleasure.

This delicious and versatile vegetable is not just a baby marrow but a specific variety of its own, though left to grow they end up looking like marrows. Hugely popular throughout Italy for centuries, they remained a well kept secret until the 1950s or 60s when they gained increasing popularity in both the UK and Northern Europe.
