Beet greens contain betacarotene and other carotenoids, folate, potassium, Iron and vitamin C, making roots and greens excellent for women planning pregnancy, women in general and anyone suffering from the chronic fatigue syndromes. Best raw and grated as salad, boiled as a vegetable, and the leaves cooked like spinach, baked in the oven or as soup (borscht).
